Why Egg Bites Are a Nutritious Option for Kids
Egg bites are a fantastic, kid-friendly option that can make meals or snacks both nutritious and convenient.
The main ingredient in egg bites – eggs – are packed with nutrition. They deliver a high-quality source of protein to support growing muscles, along with fats that contribute to brain development and overall energy.
Eggs are also a great source of essential vitamins like B12 and vitamin D, both crucial for kids’ health. And, the egg yolk is one of the best food sources of choline, a powerful nutrient for brain development. According to the National Institutes of Health many American’s diets fall short in the nutrient choline.
For kids, the recommend daily intake of choline is 200 mg for kids ages 1 to 3 years and 250 mg for kids ages 4 to 8 years. One large egg yolk delivers 139 mg of choline, or roughly 70% of the recommended daily intake for toddlers and 55% for 4- to 8-year-olds.
But, one of my favorite things about egg bites is how easy it is to boost the nutrition even more by adding in other nutrient-dense ingredients like vegetables, cheese, or even beans.
These versatile egg bites are perfect for both toddlers and older children, making them a go-to for busy parents who want to nourish their kids with wholesome, quick meals.

The base of the recipe includes whole eggs and milk. You will also add in shredded cheese, vegetables, and if desired another protein source.

Dairy Free Options
For a dairy-free option, simply swap the milk for a plant-based alternative like almond or oat milk, and use a dairy-free cheese substitute.
Vegetarian Options
If you’re looking for a vegetarian version, leave out the ham and add extra veggies or plant-based proteins like beans or tofu.

Step-by-Step Instructions to Making Easy Kid-Friendly Egg Bites
If you’re new to cooking, don’t worry! This recipe for mini egg bites is simple and straightforward. You don’t need fancy ingredients or complicated steps, and by the end, you’ll have a delicious, nutritious snack or meal your kids will love.
Let’s break it down, step by step!
Step 1: Preheat the Oven and Grease the Pan
First things first—preheat your oven to 375°F. Preheating is essential because it ensures that your egg bites cook evenly from the start. While the oven is heating, you’ll need to grease a mini muffin pan.
You can use olive oil or cooking spray—just make sure to coat each little muffin cup well so that the egg bites don’t stick. Trust me, I’ve learned the hard way!! A well-greased pan makes removing the egg bites a breeze later, so definitely don’t skip this step!
Step 2: Prepare the Add-Ins
Place the baby spinach leaves in a colander and rinse them under cold water. Once clean, give the colander a gentle shake to remove excess water.
Lay the washed spinach on a clean kitchen towel or paper towel. Pat the leaves dry with another towel to absorb the remaining moisture. This helps prevent sogginess in your egg bites.
Once dry, gather the spinach into a small pile on a cutting board. Using a sharp knife, carefully chop the spinach into small, bite-sized pieces. The smaller the pieces, the easier they’ll blend into the egg mixture.
If your ham isn’t pre-diced, place it on the cutting board and use a sharp knife to cut it into small, evenly-sized cubes. Aim for pieces around 1/4 inch thick, so they’re small enough for your mini egg bites but still give a nice burst of flavor.
Set the chopped spinach and diced ham aside for now.
Step 3: Whisk the Eggs and Milk
Next, crack your eggs into a medium-sized bowl. Add the milk and whisk everything together until the egg yolks and whites are completely mixed. Take your time with this step—whisking until smooth ensures your egg bites will have a light, fluffy texture.
If you’re unsure how to whisk, simply use a fork to poke each egg yolk to break it. Then, stir the mixture briskly until everything looks well-combined.
Step 4: Add the Good Stuff—Cheese, Spinach, and Ham
Now it’s time to add the flavor! Stir in the shredded cheese, chopped spinach, and diced ham. I’ve provided measurements, but you don’t have to be perfect with them. One of the reasons I love this recipe is because it is so flexible! If your kids prefer more cheese or less spinach, feel free to adjust.
Season the mixture with a little salt and pepper for extra taste. Stir gently to make sure everything is evenly distributed in the egg mixture.
Step 5: Fill the Mini Muffin Pan
Now that your egg mixture is ready, use a measuring spoon to fill each muffin cup with about 1 tablespoon of the mixture. This recipe should give you enough for 24 mini egg bites, so try to divide it evenly. If some cups look a little fuller than others, don’t stress—it will all work out in the oven.
Step 6: Bake to Perfection
Put the mini muffin pan into the preheated oven and bake for about 12–15 minutes. You’ll know the egg bites are done when you can insert a knife into one and it comes out clean—no liquid egg should stick to the knife.
Step 7: Rest, Remove and Enjoy!
Once they’re done, let the egg bites rest in the pan for about 5 minutes. This will help them fully set and make them easier to remove.
Carefully remove the egg bites from the muffin pan (a butter knife can help loosen the edges), and they’re ready to enjoy! Serve them warm or let them cool for later.
If you have any leftovers, store them in an airtight container in the fridge for up to 3 days. These egg bites are perfect for breakfast, lunch boxes, or a quick snack on the go.
Tips for Success: Making the Perfect Kid-Friendly Egg Bites
Here are a few of my top tips to make sure your egg bites come out perfect every time. These simple practices can make all the difference, especially if you’re new to cooking:
- Don’t rush the whisking: Taking an extra minute to thoroughly whisk the eggs and milk will ensure your egg bites are light and fluffy. Keep whisking until the yolks and whites are fully combined for the best texture.
- Customize your add-ins: Mix and match ingredients based on what your kids like. If they aren’t fans of spinach or ham, try swapping them for other veggies like bell peppers, mushrooms, or even zucchini. For added protein, consider using turkey, bacon, or even plant-based options.
- Grease the pan well: To avoid any sticky situations, make sure you grease the muffin pan liberally. You can use olive oil, butter, or non-stick spray to coat each muffin cup. This step is key to making clean-up easier and ensuring the egg bites slide out effortlessly.
- Chop add-ins finely: For the best texture, finely chop all veggies and proteins. This ensures that every bite is well-distributed with ingredients, and smaller pieces are easier for toddlers to eat.
- Check doneness with a knife: To make sure your egg bites are fully cooked, insert a knife into the center of one. If it comes out clean, they’re done! If there’s still some liquid egg on the knife, give them a few more minutes.
- Let them rest. While you may be tempted to dig in the second these delicious egg bites come out of the oven, it’s important to be patient! Let the egg bites sit in the warm muffin pan for about 5 minutes before removing them.
This short resting time allows the eggs to fully set, making them easier to remove from the pan without falling apart.
By following these tips, you’ll see just how easy and fun it can be to whip up a batch of these healthy, kid-friendly egg bites. You’ve got this!
Flavor Variations to Keep It Fun
One of my favorite things about these kid-friendly egg bites is how versatile they can be, allowing you to create a variety of different flavors. In my house, we use this recipe often to use up leftover ingredients from prior meals, like diced tomatoes, broccoli, or cooked bacon; helping to reduce food waste.
Start with the eggs and milk and get creative with your cheese, veggie, and protein add-ins. Some of my favorite combinations include:
- Swiss cheese, diced ham, chopped broccoli
- Feta cheese, black beans, chopped tomatoes and spinach
- Mozzarella cheese, chopped red bell peppers and asparagus
- Cheddar cheese, bacon, chopped broccoli and tomatoes
How to Store and Reheat Egg Bites
Add leftover egg bites to an airtight container and store in your refrigerator for up to 3 days. Egg bites can easily be reheated for a quick breakfast or nutritious snack. They also make a great addition to your child’s lunchbox!
To reheat, put egg bites on a microwaveable plate and pop them in the microwave for about 30 to 60 seconds.
If sending to school or daycare, fill a thermos with boiling water and let sit with lid on for 15 minutes. While the thermos is sitting reheat the egg bites in the microwave as instructed above. After 15 minutes, dump the water out of the thermos and thoroughly dry the inside.
Add your reheated egg bites to the warmed thermos. Add the thermos to your child’s lunchbox. This is a quick and easy way to keep their egg bites warm until lunch or snack time!
Tips for Serving Egg Bites to Picky Eaters
The great news is that serving egg bites can be fun and creative – which makes them an ideal choice for even the pickiest of eaters. If you are dealing with a picky eater, try some of these easy ways to make these nutritious egg bites even more appealing to your little one:
- Let them choose the ingredients: Involve your child by letting them pick out the veggies or proteins that go into their egg bites. When they have a say in the ingredients, they’re more likely to eat them!
- Ease them into other ingredients: If your kid isn’t very adventurous in their food choices, try starting with plain egg bites – made only with eggs, milk, and cheese. When trying new versions for my kids, I tend to make two batches of egg bites – one new and one tried-and-true favorite version. I then serve my kids a few of their favorites along with one of the new flavors.
- Cut them into fun shapes: Kids are more likely to try something when it looks playful! Try using small cookie cutters to turn your egg bites into stars, hearts, or other fun shapes your child loves (when my son was little everything was in the shape of trucks!)
- Pair with dips: Kids LOVE to dip food! (If I’m being honest, we all love to dip food!) Serve egg bites alongside dips like ketchup, guacamole, tzatziki, or hummus. Dipping can make the meal feel interactive and more exciting for little ones.
Give this recipe a try, and don’t be afraid to experiment with your own variations! I’d love to hear what ingredients you used—be sure to share your creations in the comments below!
